Easy Nutella Flapjacks

04:40

"I realise it has become too easy to find a diet to fit in with whatever you happen to feel like eating and that diets are not there to be picked and mixed, but picked and stuck to, which is exactly what I shall begin to do once I've eaten this chocolate croissant." (Helen Fielding, Bridget Jones's Diary)
After my run, the Sunday afternoon baking bug caught me this week... But I was tired, and after all the birthday eating shenanigans (and there were a lot), I've been trying to reign in the sweet treats this month. As a result, I decided to experiment and I mustered up these really simple flapjacks which are healthier than traditional recipes.
With only 4 ingredients and 150 calories per slice (based on 10 servings), I think these almost count as clean eating... Okay, okay, maybe they're not quite clean, but they have a sweet and nutty flavour with less refined sugar and they're delicious with a cup of tea. In fact, I munched on one without regret this evening with a mug in hand!
Ingredients
100g oats
25g ground almonds
75g honey
125g Nutella
Method
1. Preheat the oven to 200 degrees Celsius/gas mark 6.
2. Measure out all of the ingredients into a bowl, and put into the microwave for 30 seconds to soften.

3. Mix everything together until you have a chocolatey brown oat ball.

4. Place the ball into a tray lined with baking paper and flatten out. The mixture can be quite stiff, but make sure the mixture is even.

5. Bake for 15-20 minutes.
6. On removing the flapjacks from the oven, they will gooier than when you put them in, however after 30 mins or so of cooling, they will harden on the outside and remain squidgy within.

And there you have it, a tasty and sweet snack with nearly all natural ingredients!
